Paleo cauliflower rice sushi

Wanting to try paleo but can’t give up your beloved sushi?! Well we’ve got you covered with this cauli-rice alternative and it tastes just as yum!

6 nori seaweed sheets

½ cauliflower, cut into florets and grated

1 clove garlic, crushed

2cm piece fresh ginger, finely chopped

2 tbs sesame oil

1 tbs coconut aminos

1 tbs coconut oil

Himalayan salt and pepper

For the fillings

1 full chicken breast, cut into strips

1 can of tuna in springwater (drained)

1 tbs fresh dill, finely chopped

1 carrot peeled, and cut into matchsticks

1 cucumber, cut into matchsticks

1 avocado sliced

Method

  1. Preheat your oven to 180°c and line a baking tray with baking paper.
  2. Place chicken strips onto the tray, season with salt and pepper.
  3. Bake in the oven for 15 minutes or until cooked through, then allow to cool.
  4. Meanwhile, melt the coconut oil in a fry pan on medium heat. Add the garlic, ginger and cook for two minutes.
  5. Add the grated cauliflower and continue to cook for 10 minutes or until just soft.
  6. Take the pan off the heat, stir through sesame oil and coconut aminos, leave this to cool.
  7. In a bowl mix the tuna, dill, salt and pepper.
  8. Now it’s time to get your production line ready! Have all the ingredients out in front of you. Using a sushi bamboo rolling mat, place the nori sheet shiny side down.
  9. Add a cup of cauli-rice to the nori sheet spreading it out evenly. Cover the whole sheet, except for a 2cm gap across the top edge.
  10. At the bottom of the sheet, add horizontal lines of your desired ingredients. Some of our favourite combos are chicken, avocado and cucumber and tuna, dill, avocado and carrot!
  11. Now for the tricky part, holding onto the bottom edge of the mat, roll the sushi into a tight roll. Seal the roll by rubbing wet hands over the nori sheet. Most nori sheets have a diagram to show you how to roll sushi or you can find lots of videos on YouTube!
