The healthiest, easiest, chewiest choc chip cookies

We all love a gooey chocolate chip cookie; one that’s crisp on the outside and melts in the centre. This recipe promises to deliver just that. These are my healthiest, easiest, chewiest choc chip cookies minus the tub of butter, tonne of sugar and extra kilo on the scales. Enjoy!

Chewy Choc Chip Cookies

Vegan, gf, paleo
Makes 10

1/2 cup almond meal
1/2 cup desiccated coconut
1 heaped tbs pure almond butter
5 medjool dates (pitted)
1 tbs pure maple syrup
1 heaped tbs cacao powder
pinch cinnamon
few drops natural vanilla essence
pinch himalayan crystal salt
1-2 tbs dairy free chocolate chips

Method

Place all ingredients (except chocolate chips) in a food processor and blend to a dough, stir in chocolate chips. Shape dough into flat cookies and place on a lined baking tray.
Bake for 5 – 10 mins on 180 degrees celcius. These cookies will burn quite easily if left too long. The aim of placing them in the oven is only to slightly harden them. Allow to rest for 15 minutes before serving.
