This Halloumi & Grilled Peach Salad Is A Brilliant Healthy Side Dish

Finding the perfect side dish can be tricky. You want it to be totally delicious, but also extremely low maintenance since your main course will be more time-consuming. So, what’s a girl to do?

Thankfully, nutritionist and whole foods cook, Jacqueline Alwill has shared her halloumi, grilled peach and asparagus salad recipe. You really only need a handful of ingredients to whip it up (many of which you may already have in your pantry), but the result is a delicious, light, and healthy side dish that’s sure to impress. The best part: it only takes 5 minutes to make!

Halloumi, Grilled Peach and Asparagus Salad

Serves 4 as a side

Ingredients:

4 yellow peaches, seeds removed and cut in quarters
2 bunches asparagus, ends trimmed
225 halloumi, sliced approx 5mm thick
Olive oil
2 cups baby rocket leaves
Dressing:
2 teaspoons dijon mustard
2 tablespoons olive oil
Juice of half lime
Sea salt and black pepper

Method: 

  1. Heat a large grill plate on medium heat and drizzle with oil. Cook asparagus, peaches and halloumi on the grill for 3-4 minutes, turning half way.
  2. Whilst they are cooking whisk together ingredients for the dressing and pop the rocket leaves on a large serving platter.
  3. Once asparagus, halloumi and peaches are cooked arrange over the rocket, drizzle with dressing, season with sea salt and black pepper and serve.
