An easy-as vegetarian salad to try!

Cottage cheese salad

With the weather warming up we’re craving salad here at Sporteluxe HQ. Which is why we’re loving David Bez’s new cookbook Salad Love (Quadrille; $29.95). It is full of 260 clever salad combos – one for every weekday of the year! This cottage cheese, peas and cucumber combo is one of them.

Cottage cheese, peas and cucumber salad

Ingredients

For the salad

50 g rocket and baby watercress

50 g pre-steamed peas

50 g cucumber, chopped

50 g cottage cheese

2 spring onions, finely chopped

For the dressing

1 tbsp extra virgin olive oil

1 tsp cider vinegar

Pinch of salt and pepper

 

Method

  1. Mix dressing ingredients. Set aside
  2. Combine salad ingredients. Toss together. Drizzle with dressing and serve.
