The quintessential taste of the Californian taco stand has been given a guilt free makeover by The Cook’s Grocer. Using lightly grilled flathead, a red cabbage and corn slaw, natural yogurt dressing and gluten-free corn tortillas, these Baja fish tacos are a fantastic meal if you are looking to keep in shape over summer (with just 400 calories per person!)
300g flathead (or fresh firm white fish)
6 corn tortillas (6 inch)
4 sprigs coriander
1/4 small red cabbage
1/4 small red onion
1 corn cob
3 tablespoons natural Greek yogurt
1/2 teaspoon chilli powder or Tabasco sauce
1. Prepare Fish
Juice half of the lemon provided. Cut the fish into large bite sized pieces and place it in a shallow dish. Pour over the lemon juice, lightly coat with olive oil and season with salt. Mix through and leave to marinade until ready to cook.
2. Prepare Slaw
Finely slice the cabbage (use a mandolin if you have one). Thinly slice 1/4 of a red onion. Place the corn on a hot griddle or fry pan and char on all sides. Once charred, cut the corn kernels from the cob. Combine the cabbage, onion and corn kernels and mix to combine.
3. Make Baja sauce
Mix yogurt and chilli powder (optional / to taste), a squeeze of the lemon and a pinch of salt in a bowl. Combine well and set aside.
4. Cook fish
Heat a lightly oiled griddle pan or fry pan to a high heat. Cook fish for approximately 2-3 minutes each side.
5. Warm tortillas
While the fish is cooking, heat the tortillas. In a non-stick fry pan on a medium heat, dry fry the tortillas until warmed through. This should take around 10 seconds each side. Alternatively, warm the tortillas on a plate in the microwave for 15 seconds.
6. To serve
Place a tortilla onto a plate. Place slaw on tortilla and top with fish, a squeeze of the lemon and sprinkle with roughly chopped coriander and a spoonful of Baja sauce.
