Welcome back to Lunch with Leah! A new series where food blogger and recipe developer, Leah Itsines shares her favourite lunch-time ideas to not only save you time and money but actually get you excited about lunch (even if it’s at your desk)! It’s full of immune-boosting ingredients including garlic, ginger and honey and is packed full of flavour.
“This honey soy chicken skewer recipe is quick, delicious and not to mention easy to make! Its great paired with a side salad and some rice or in a healthy wrap. If you don’t want to skewer the meat, grilled on its own with the marinade is just as good!” — Leah Itsines.
Makes: 10 small skewers
500g chicken thigh, cut into cubes
2cm piece of ginger, grated
2 large garlic cloves, grated
1 tbsp sesame oil
1/4 tsp chilli flakes
2-3 tbsp honey
1/4 cup dark soy sauce
1 tbsp sesame seeds
10 bamboo skewers, soaked in water
1. Place ginger, dark soy sauce, garlic, sesame oil, honey, chilli flakes into a large bowl with the chopped chicken and mix well. If you have the time, let the mixture it sit for 1-2 hours to marinate in the fridge.
2. Using the bamboo skewers, thread chicken through and repeat until the skewer is full. Repeat with the remaining chicken and skewers.
3. On a hot BBQ or grill plate, cook for around 10 minutes on all sides or until completely cooked through. Sprinkle sesame seeds as a topping.
