Is this the best summer breakfast ever?

Love your chia seeds? So do we! Especially when they’re used to make a creamy pudding like this creation from the chefs at The Byron at Byron Resort and Spa.

The Byron At Byron, Chia Seed pudding

The Byron at Byron Chia Cups


2 cups almond milk
1 cup coconut cream
1/4 cup chia seeds
1/4 chopped and roasted almonds
1 tsp ground cinnamon
4 tsp honey
1/4 cup roast coconut
Assorted tropical fruit and nuts (garnish/to serve)


  1.     Combine all the ingredients. Mix well and pour into glasses.
  2.     Chill for about at least an hour (overnight would be best) then return and mix it up again. The chia seeds will have expanded.
  3.     Serve cold with sliced fruit and nuts on top.
Serves 2-4 (depending on glass size)
