Love your chia seeds? So do we! Especially when they’re used to make a creamy pudding like this creation from the chefs at The Byron at Byron Resort and Spa.
The Byron at Byron Chia Cups
2 cups almond milk
1 cup coconut cream
1/4 cup chia seeds
1/4 chopped and roasted almonds
1 tsp ground cinnamon
4 tsp honey
1/4 cup roast coconut
Assorted tropical fruit and nuts (garnish/to serve)
- Combine all the ingredients. Mix well and pour into glasses.
- Chill for about at least an hour (overnight would be best) then return and mix it up again. The chia seeds will have expanded.
- Serve cold with sliced fruit and nuts on top.
Serves 2-4 (depending on glass size)
