Jacqueline Alwill’s Flu-Fighting Baked White Fish With Lemon Ginger Vinaigrette

Not only is this dish healthy (the lemon ginger vinaigrette will kick any nasty colds in no time) and delicious, but it’ll only take 15-20 minutes to rustle up.

Baked White Fish with Lemon Ginger Vinaigrette

Serves 2

What You’ll Need

2 Nubs of Fresh Ginger
75g Beans
1 Lemon
1 Large Red Chilli
200g Leeks
2 x 150g Ling Fillets
75g Peas
180g Zucchini
50ml Extra Virgin Olive Oil
1 tbsp White Wine Vinegar
1/2 Tsp Sugar

Method

Step 1 Prepare ingredients

Preheat the oven to 200C and line two oven trays with baking paper. Peel and finely grate the ginger. Finely grate the zest and juice the lemon. Trim the leek, discarding dark green parts, then cut into thin matchstick. Cut the zucchini into thin noodles. Finely chop the chili.

Step 2 Prepare vinaigrette

Combine 1 tbs oil, ginger, vinegar, sugar, chili, lemon zest and juice in a bowl, stirring well until sugar dissolves. Meanwhile, bring a saucepan of salted water to the boil.        

Step 3 Prepare fish

Season the fish with salt and put on one oven tray. Drizzle 1 tsp of the dressing over each fish fillet.

Step 4 Cook fish and zucchini

Put the zucchini onto the other tray, drizzle with 2 tsp oil, season with salt and pepper and toss to coat. Place the tray with the fish on a higher shelf in the oven above the zucchini. Roast for 10 mins or until just cooked through.

Step 5 Make pea smash

Meanwhile, add the peas to the pan of boiling water and cook for 1-2 mins until heated through. Drain the peas, then return to the pan with the remaining 1 tbs oil and season well with salt and pepper.

Step 6 Get ready to serve

Using a stick blender, pulse the peas until almost smooth. Divide the pea smash among plates and top with the zucchini and fish. Drizzle with the remaining dressing to serve.
