When it comes to healthy, high protein snacks, you’ve got it pretty much sorted. It usually involves a boiled egg or two, a handful of nuts or a tub of Greek yoghurt—which are all great options (especially when you’re on the go). But just like everything, sometimes you gotta mix it up to keeps things interesting, which is where this recipe for Smoked Salmon Cucumber Split comes into play.
Baby cucumbers are one of the lowest kilojoule veggies that also happen to have a high water content which makes them a deliciously crunchy and hydrating snack. Team with salmon and ricotta for a good hit of protein and you’ve got yourself a creative mini meal that you can enjoy at any time of the day. Not only will it help balance your blood sugar, it’ll leave you feeling satisfied so that you don’t go reaching for any sneaky sweet treats (bookmark these keto caramel truffles if the cravings do hit).
