Paleo snacks! Healthy sesame crackers

We love to make up a batch of these paleo sesame snacks for a week full of 3pm delish snack times!  The best thing is that you can whip them up in 10 minutes! What more could you want?! Actually, now that we think of it, how would some paleo chocolate go drizzled on top of these bad boys? Umm yeah, we think that would go just fine thanks! Enjoy!

Paleo sesame snacks

Serves 15

Ingredients

2 cups sesame seeds

1 cup almond meal

1/2 cup honey (if you want a lower GI version, try half honey and half rice malt syrup)

1/4 cup coconut oil, melted

Method

1 Preheat oven to 180°C.

2 Combine all of the ingredients into a large bowl and mix well.

3 Split the mixture in half. Place one half between 2 pieces of baking paper.

4 Roll out with a rolling pin to about ½ cm thick. Carefully peel off the top layer of baking paper and transfer to a baking tray.

5 Repeat with the other half of the mixture.

6 Place both baking trays into the oven for 10 minutes or until golden brown.

8 Allow to cool completely before chopping or snapping into paleo sesame snacks.
