If you’re no Nigella, don’t let the ‘cook time’ put you off. All you have to do is rub it, put it in the oven, flick on Netflix and chill.
Prep Time: 20 minutes | Cook Time: 2 hours 30 minutes
1 lamb shoulder, bone in (approx. 1.5kg)
1 tsp extra virgin olive oil
1 tsp paprika
1 tsp thyme leaves
1 tsp Mexican chilli powder
1 tsp honey
1 tbsp wholegrain mustard
600g Desiree potatoes, cut into 2-3cm chunks
1 tbsp whole egg mayonnaise
1 tsp whole grain mustard
1 tbsp chopped chives
1⁄4 white cabbage, thinly sliced
1 tbsp vinegar
1 tbsp extra virgin olive oil
Cucumber pickles, sliced, to serve
Cooking Tips: if you can’t find a bone-in shoulder, a leg with a bone in or an easy carve shoulder are good substitutes.
