1 cup blanched almonds or almond meal
1-cup raw macadamias
1 cup shredded coconut
2 cups desiccated coconut
6 medjool dates
1-2 tbs coconut oil (start with one, add extra if needed)
few drops vanilla extract
pinch Himalayan crystal salt
- Throw all ingredients into a food processor except the desiccated coconut and process until it all sticks together.
- Place desiccated coconut in a bowl.
- Roll mixture into balls and roll in the desiccated coconut and enjoy!
- Keeps for 2 weeks in an airtight container refrigerated.
