Courtney Swan is living the dream.
Still earning her Masters of Science in Functional Nutrition, Swan started her own practice Realfoodology and has already nabbed some major clients—including pop star and hit-maker Tove Lo.
Swan travels the world with Tove Lo, helping the singer stay healthy and fit on the road as she tours internationally by developing healthy recipes and meals packed with real, whole food.

As a Functional Nutritionist in-training, Swan believes that eating the right foods doesn’t just help people reach a healthy, happy weight—a proper diet can aid in treating everything from anxiety to acne. For Swan, the holistic perspective that came along with a Functional Nutrition degree was far more appealing than the outdated, “big food” centric curriculum that’s taught in many pre-RD programs.
According to Swan, “They were (are) still teaching future RD’s to prescribe low-fat diets to their clients. Guh. The science behind this is out and guess what, we were wrong about fat. We need it. Our brain is mostly made of fat and we need good healthy fats for optimal brain health!”
In fact, this low-fat lie is Swan’s biggest pet peeve—and the number one piece of information she wishes everyone knew about nutrition!
I wish people knew how damaging a low-fat diet is. Fat is what keeps us full for longer, keeps sugar cravings at bay, regulates healthy blood sugar levels and optimizes brain function.
Start integrating more healthy fats into your diet by cooking with high-quality oils like coconut, MCT, avocado, and olive oil. Check out @realfoodology’s Instagram page and you’ll see that Swan is also a big fan of avocado, hummus, and nut butters—all good fats that help with brain function and happen to taste amazing.
