Your Ultimate Healthy Hangover-Friendly Breakfast to Prep Now and Eat Tomorrow

Let’s fast-forward to tomorrow morning. It’s Saturday, perhaps you overindulged a little on the happy hour prosecco last night, and you need something to eat–immediately. We know Seamless seems like a good idea, as do fried eggs and several helpings of bacon (or maybe a burger with fries). Your impulse-control is also pretty poor when you’re hungover, so it’s likely all your healthy eating rules will go out the window for the next 12 hours while you eat a whole lot of stuff that’s actually not doing you (or your hangover) any good. To prevent this, try preparing tomorrow’s healthy breakfast recipe today, and stop yourself from getting off track.

Ahead, Joy McCarthy, nutritionist and blogger at Joyous Health, shares her own favorite day-after-drinking breakfast food: Sweet potato frittatas. “Eggs are the perfect hangover food, and they are a healthy comfort food too,” she explained. They’re packed with everything you need to keep unhealthy cravings at bay. The high amount of protein (from ingredients like eggs and almond milk) will help to keep feeling full and reduce the desire to snack mindlessly, while the sweet potato satisfies those desperate carb cravings that are a hallmark of all serious hangovers. Oh, and there’s cheese—because delicious.

Mini Sweet Potato Frittatas

Serves 4

Ingredients
8 whole organic eggs
1/2 cup nut milk
1 cup cooked sweet potato, small cubes
1/2 cup fresh cilantro, chopped
4 green onions, chopped
1/2 cup feta cheese, crumbled
1/4 cup Hemp Heart Toppers: Onion, Garlic & Rosemary flavour
Salt and Pepper

Method
Preheat oven to 350F degrees.
In a large bowl, whisk the eggs and add the milk, sweet potato, cilantro, onions and feta cheese.
Grease or line a muffin tin with paper cups. Evenly divide mixture among 9 muffin cups.
Sprinkle Hemp Heart Toppers on top of the frittatas.
Bake for 15 to 20 minutes or until golden brown.
Enjoy immediately or serve tomorrow.
