At the time, we all wondered what this magic Kim Kardashian diet involved – and she pointed to an age-old eating plan you probably remember your mom following: the Atkins diet.

Although months have passed since Kim’s crazy-fast slim-down, interest in exactly how she reached her goal weight so quickly still hasn’t subsided. Whether you’re a fan of Kardashian or not, we bet you’re also curious to know exactly what it took to drop all of those pounds quite that fast. Same – it’s why we chatted with Colette Heimowitz, vice president of nutrition and education at Atkins and the woman behind Kim’s post-pregnancy diet.
Apparently the reality star followed a specific plan called “Atkins 40,” which offers an updated spin on the classic meal plan that’s known for being high in protein and fat, and low in carbs. While the Atkins diet was largely thought to be quite restrictive, the new plan is apparently more relaxed, starting followers on 40 grams of carbohydrates per day as opposed to the 20 grams allowed in the original plan, Atkins 20.
A typical breakfasts on Atkins 40 includes 1/2 cup of rolled oats with 1/4 cup of strawberries and 1/4 cup of pecans, or two fried eggs with a turkey sausage and a thin slice of whole grain bread. While on the diet Kim snacked on 1/2 cup of red peppers with five cherry tomatoes and two tablespoons of Italian dressing, or 1/2 cup of Greek yogurt with 1/4 cup of slivered almonds and 1/4 cup of blueberries, among other options. A classic lunch on this diet could be two cups of lettuce with four to six ounces of salmon and a couple of tablespoons of Caesar dressing. Dinner commonly includes some grilled chicken (four to six ounces) with six stalks of asparagus, one medium tomato, two ounces of fresh mozzarella, basil, and a little olive oil and balsamic vinaigrette. Colette Heimowitz: Kim followed the Atkins 40 program, which is an extension to Atkins 20 and gives people another viable option with flexibility in the foods they eat and the ability to maintain their weight loss. On Atkins 40, you start out with 40 grams of net carbs, which means you can eat from all food groups from the start – eating a wide variety of foods with lots of veggies, low glycemic fruits such as berries, a variety of protein choices such as fish, poultry, lean meat, dairy such as Greek yogurt and some cheese, health fats such as olive oil, nuts, and avocados.
When carbohydrates are low enough, such as 40 net carbs, the body will resort to its back up fuel system which is fat burning. You will burn the fat stored on your body as well as the fat you are consuming for energy. Atkins 40 allows people to customize their carb intake and enjoy a variety of food options, so it makes it easier to follow and less likely to fall off or cheat the program. A person can eat from all food groups from day one on the program, which provides great variety and flexibility.
This is an effective program for new moms to follow because they’re still getting all the nutrients they need. When a mother is breastfeeding we recommend losing at a pace of no more than two pounds weekly. That can be accomplished with adequate calories in the 1800-calorie range.
