New Zealand Chef, Megan May swears by her strawberry chia jam, which is chock-full of freshly picked berries, wholesome chia seeds and smooth honey.
“This jam is a great way to use up fresh berries when they are abundant. It’s very quick and easy to make and most importantly, the kids love it!” says Megan. “It also makes for a great gift, just mix up a few batches and recycle some cute old jars and start ‘spreading’ the love.”
455 g (1 pound) fresh strawberries, hulled
60 ml (¼ cup) sweet apple cider vinegar
2 tablespoons honey
1 green chilli, half seeded
2 tablespoons chia seed
This recipe has been written for the C-Series machines with variable speed control and standard 2.0-litre container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the variable speed, processing time, and/or ingredient quantities but it’ll still be delicious!
